Today the family and I journeyed to Torrey Pines Trail on an afternoon day hike. On our hike we spotted many ripe prickly pears. We decided to pick a few a bring them to our dinner date.
Upon arrival at our neighbors Matt and Summer. I whipped together a simple syrup of prickly pear fruit cut in large chunks.
I added the fruit to 2 cups of sugar and a little water and cooked it to a nice syrup consistency.
Then I added syrup to a blender of ice and my favorite is 100% agave tequila.
Our hosts made a fabulous dinner. And the prickly pear drinks turn out such a fabulous color all naturally.
